Today’s featured recipe is one I found on Pinterest about 8 years ago. I wish I could give credit where it’s due but it’s been so long I have no idea what corner of the web I found it and printed it out from! But, it’s been a faithful recipe for me that turns out every time. Serve it up with a salad and dinner is ready!
Crock Pot Chicken Tortilla Soup
6 chicken breasts, cooked and diced. (To save time, you can also pull from a rotisserie chicken or grab a giant bag of pre-cooked chicken from Costco that’s available in the freezer section.)
1 Large (28oz) can of diced tomatoes
1 can of medium enchilada sauce
1 onion, chopped
1 can chopped green chiles
1 tablespoon of minced garlic
1 (32 oz) container of organic chicken broth
1 teaspoon of cumin
1 teaspoon of chili powder
Salt & Pepper to taste
1 (10 oz) package of frozen corn
For garnish (optional):
Corn Tortillas or chips
Avocado slices
Shredded cheese
Sour Cream (we used vegan)
Green Onions
- Boil your chicken until fully cooked. I boil the breasts for about 20 minutes.
- Dice the chicken.
- Place all ingredients in the crock pot and stir. Cover and cook on low for 5-6 hours or High for 2-3 hours.
- To serve, add garnish, and voila! Delicious Tortilla soup that you can make at home.
